Although Pancake Day is over, you can still enjoy this delicious Pampered Chef recipe for USA Style Pancakes. These pancakes are wonderfully fluffy and thick and they're great with either sweet or savoury fillings.

Serves 2 - 4
 
3 large Eggs
115g plain flour
1 heaped teaspoon of baking powder
140ml milk
1 pinch of salt
 
Separate the eggs by putting yolks in one bowl and whites in another.  Add the flour, baking powder and milk to the yolks and whisk to a smooth thick batter.
Whisk the egg whites with the salt until they form stiff peaks (use an electric whisk if you have one).  Fold the whites into the yolk mixture and its now ready to use.
You could transfer the mixture to a large jug, if you have one, to make it easy to pour the mixture into the frying pan.
 
Heat a non stick pan on a medium heat.  Add a teaspoon of oil with each pancake. Pour in the batter and tip the pan to make an even round pancake. 
Fry the pancake for a couple of minutes (you can make them any size you want) until it starts to look golden and firm.   Then flip! 
Will you be daring and throw them in the air like a professional and impress the kids, or will you be careful not to waste
a single morsel and use a spatula????  They are ready to be eaten once cooked on both sides.  Add any topping you like but here are some tasty suggestions for you:-

  • Chocolate spread with any fruit (banana's are perfect).
  • Whip some fresh double cream and stir in some of you favorite jam and spread on the pancake.
  • Good old sugar and lemon.
  • Why not use honey and lemon instead!
  • Maple syrup.
  • Smoked salmon and cream cheese.
  • Crispy bacon or pancetta with a fried egg on top.

If you really want to impress, make a stack!  Make 4 pancakes roughly the same size and then stack them one on top of the other, adding the same filling to each one
as you go and finishing with some of the filling on top of the last pancake.  Gordon Ramsay eat your heart out!
